Saturday. 12/09/2015. 'Egg and Bacon Omelette'

The Recipe is from 'Feel Good Food Autumn 2015', Page 27.























First I must say that the title of this one made us crack up big time: What is an omelette without eggs? If omelette is made of eggs already can you put egg as a star show ingredient? Well may be, but it was the screaming out loud obvious one in the lot. We are not going to argue that matter any longer, it made us laugh, fair to say. The mag's pic was good enough to give that baby a go.





The amount of eggs, ten, seemed a lot to us initially but it does require it. 
This recipe was dead easy to make. The combination of Feta cheese  and bacon works a treat. 

I did not use any caperberries for the simple reason that my partner dislike them.

However I added some grated Emmental cheese (100g)  in the eggs mixture itself, along with 3 tablespoons of chopped parsley.

It was served with an accompaniment of braised baby parsnips, carrots and broad beans. That day, we harvested the parsnips which gave us a meagre result this year. However slowly braised in butter, with shallots, and a dollop of maple syrup, they were a true treat. 




You can't go wrong with a nice omelette. It was a lovely and filling dinner which rated the all five star in our books. So we will do it again, with little tweaks. First we will replace the bacon with Chorizo, and put a dash of smoked paprika within the eggs mixture, maybe replacing the Feta for Manchego cheese instead. The Spanish influenced omelette would be served with a simple salad of roasted red peppers and tomatoes. 




My partner fantasise on another twist for that omelette: make it big breakfast like. It would work by adding some sliced Chipolatas along with the bacon, replacing the parsley for chives. The Big Breakfast omelette would be accompanied by sautéed mushrooms, and slices of fried tomatoes. 

So yes, the omelette will make a come back  in a kitchen near me, if ever slightly jazzed up differently. :)

One advantage of that dish was the quantity: it left two quarters of omelette which are easily packed up and gave my partner and I, our lunch boxes for the following Monday. For the economical aspect as well as the taste, without mentioning how easy it was to do, it was an all rounder of a winner.
